Avocado Egg Salad Lettuce Boats (No Mayo)

I made my own version of “Mayoless” Egg Salad and I’m pretty pleased with the results!  I know it’s a day late for St. Patrick’s day, but this meal is entirely green! 🙂  If you have children it would be a great way to make “green” food for St. Patty’s day…and it’s healthy too!

Ingredients:

2 Hard Boiled Eggs

1/2 Ripe Avocado

Several shakes of onion powder

1 Tsp of Dijon Mustard

1 Tsp Lemon Juice

1 Tsp Sweet Pickle Relish

A shake or two of Dill Seasoning

A shake of hot sauce (optional) I use Chipotle Tabasco

2 Romaine  Lettuce Leaves

Chop up Eggs in a bowl.  Add Avocado and mash together.  Add additional ingredients and combine.  Spoon 1/2 of each mixture into a Romaine lettuce leaf .  Add a shake or two of hot sauce on top if desired.  Serve with veggies or fruit.  I used Sugar Snap peas here to stick with the “Green Theme”
